Recipe/Tutorial: Chicken Salad with Grapes and Nuts

Hi Everyone! As always, I apologize for my lack of posts -___-;; After my last post, (as was mentioned in the post) I was terribly sick for 2+ weeks after I made that post. Soon as I got better, I had finals, and juries for school. And 24 hrs after my last final, I had to completely move out of my school's dorm--back to California AKA halfway across the country!! -_____-^ I had to stuff everything into a storage before hanging out with my friend Ellen for a few days at her place and coming back.. NOW! I'm finally home, in my parents' new place :) after coming home, I had to unpack and unpack again. -____- unpack my stuff from NY, and unpack my stuff from my parents' old place. -sigh- As of now, I am happily settled in a new city, and just trying to get into a productive lifestyle!

What better way to start off that lifestyle than making regular posts on my blog again? hehe ;) (and a job lulz)

I haven't made a cooking tutorial in SO long! Well, here it is--Chicken Salad with Grapes and Nuts! It's really simple, and you can eat it without the sandwich part as well.

Ingredients:
-1 can of chicken (seasoned or non, it's okay. I used season)
-1/4 of a yellow/white onion
-1 stalk of celery
-handful of nuts (peanuts or almonds or walnuts) [I used peanuts just because it's what I had in the pantry]
-1 1/2 cups of Green grapes
-4 Sandwich bread of your choice [I used crescents]  
-1-2 tbs of mayonaise
-1/2 of a lemon's juice
-1-2 stalks of green onion
-salt, pepper, and garlic powder to season

You can always use whatever you have lying around, and don't HAVE to follow every single ingredient. I've had it with walnuts before, and it tastes great. I made it once forgetting the celery, green onions, lemon juice and it still tasted fine.

Okay! let's get started...



1 can of chicken! This one is from costco, and it's seasoned (it's salty).

Crescents! These are from costco :{D You don't have to use these. You can use rolls, or sandwich bread.. whatever floats your boat! You can also eat the chicken salad with crackers as crowd pleasers for a gathering, or a snack. My mom likes to eat it just by itself.

1/4 of an onion, finely chopped! Trust me, you need the onion in here.


Celery! Chop em up, and cut them in half. They're a little too big unless cut in half again.

Green grapes! I just bought the smallest package of grapes from my local grocery store, and they were enough to make this recipe 4 times.

a juice of 1/2 a lemon!

...and 1-2 tbs of Mayo! You can just keep adding little by little to your liking.

Instructions:


Drain yo' chicken and break up the big clumps! If your leave them in big chunks, the water from the veggies and fruit and the mayo doesn't distribute evenly, leaving you with random chunks of dry meat.

Add the onions...

the celery...

the green onion...

And the mayo! Just start off with 1 tbs and continue to add in more little bit at a time. You can always add more, but can't take away.

I added in the grapes last because the mixture may get watery while waiting for the ingredients to be added. Halve them, and halve them again! (quarter them)

add the nuts! But if you choose to add peanuts like me, don't go too crazy, because they're a bit drying.. also, if using peanuts, break them in half!

Juice that lemon!

Add in black pepper, salt, and garlic powder.

mix mix mix mix mix mix

Now.. if using crescents like me, halve them, but don't cut all the way!

Stuff it! One batch made me 4 sandwiches.

Everytime I made it, I'd add more and more grapes... it's so yummy with them! Takes away from the dryness of the bread and nuts. yummm. Don't hold back from the grapes!

Finished! :)

This recipe is versatile, and don't have to eat it as a sandwich. You can serve it by itself or with some crackers. Go figure!

As a side note... I received flowers from my friend in Korea about a week ago. I know, it's been awhile, but I wanted to brag about it :p

I had a voicemail in the morning from this random guy saying he couldn't find my house... he left a number and an address to go to pick up my parcel. I was so confused, but went and found out it was a flower shop LOL. The delivery man failed, but I still managed to get them!


I was so excited lmfao. My bffls austin and humsheen were over taking pictures of me while I was busy taking pictures of the flowers hahaha


ayeeeee what a picture heavy post! >_< but honestly, I think all my posts are... hahaha pictures are worth a thousand words, feel me? ..no? ah ha ha ha...
