Recipe/Tutorial: Mrs. Field's Chocolate Marshmallow Clouds

Why, hello hello there! Sorry for posting another cookie recipe right after the other...it's just--I've been on a crazy...

I came across this recipe on the Mrs. Field's website. They're double chocolate cookies with mini chocolate chips and marshmallows. You can opt out the mini choc chips for regular sized ones, or even with white choc chips. Feel free to even add nuts if that's your thang. A pinch of sea salt on top would be fabulous as well! It didn't take me very long to do, and had all of the ingredients already in the pantry. But.. be warned, these are so sweet.. couldn't eat more than 2 in one sitting! But they're so good!!! They taste like brownie...but they're not.

I halved the recipe because these recipes that are put online... the quantities are HUGE! I end up having to make 3-4 batches each time I use these online recipes... AFTER halving the recipe, I still ended with a little over 3 dozen cookies...

Ingredients:
-1 1/2 cups flour
-1/3 cup unsweetened cocoa powder
-1/4 tsp baking soda
-1/2 cup sugar
-1/2 cup brown sugar, packed
-1/2 (1 stick) butter, softened [I used unsalted though the recipe asks for salted--I just put a pinch of salt in with the dry ingredients]
-1 egg
-1 tsp vanilla extract
-1 cup mini chocolate chips [or any other choc chips you prefer, and/or nuts!]
-4 oz (about 2 handfuls) mini marshmallows, frozen [don't exactly have to be frozen, just chilled--stick 'em in the freezer before you start]

Preheat the oven to 400 degrees fahrenheit!

In a medium bowl, mix in your dry ingredients. Set aside.

In a large mixing bowl, use an electric mixer on medium speed to cream together the butter and sugars.

Once incorporated, add in the egg and vanilla.

Lowering the speed to low, add in the chocolate chips, and whatever else you desire.

Slowly, add in the dry ingredients to the large bowl.

The dough should be extremely thick. My electric mixer was having a hard time because it was so tough! But that doesn't mean you should kick the speed up, you'll just end up smoking and burning out your engine! If it's too thick for your mixer, go ahead and switch to a spatula.

Now, go grab those marshmallows out of the freezer! Gather 3 marshmallows with just enough dough to cover them.

You'll end up with these balls. Flatten the tops a bit! The picture was taken a before I did.

Bake for 9-10 minutes. Tada! Perfection. Let cool before removing from pan!

I served mine with some Earl Grey Tea to balance out the sweetness. I love my mom's old teacups! She has quite a few... she says I can take them when I get married :p

And as always... food always tastes better when shared with good company. My loving parents. Both of them are obsessed Candy Crush... LULZ my dad was in his boxers...OLE!

My mom always says that whenever I'm home for vacation, she gains so much weight... always feeding them! =)
